Easy Mediterranean Chopped Salad Recipe

Enjoy this Easy Mediterranean Chopped Salad with cucumbers, tomatoes, red onions, Kalamata olives, and a light lemon-olive oil dressing! It's ready in 15 minutes. Delicious alone or with your favorite protein. 

Ingredient

– For the Dressing: – Juice and zest of 2 large lemon – ½ cup olive oil – ½-1 teaspoon salt – For the Salad: – 1 large English cucumber – ½ cup to 1 cup red onion – 4 Roma or Plum tomatoe – ¼-½ cup Kalamata olive – 1 teaspoon salt (I used sea salt) – ½ teaspoon freshly ground pepper

Make simple dressing: Mix the dressing ingredients in a large bowl. Put all the dressing ingredients in a glass jar. Shut the lid and shake hard.

Wash the cucumber and tomatoes for the salad. Dice all veggies finely. Chop olives. Combine all ingredients in a large bowl.

Stir the salad: Add the dressing and mix. Check the flavor and add salt and freshly ground pepper to taste.

If you like spice, add some hot pepper! It can be marinated for 5-15 minutes to blend the flavours.
