Almond Biscotti Recipe

This standard almond biscotti recipe is just slightly sweet and full of almond flavor. It's great for dipping in your morning coffee or tea. 

– 3 cups all-purpose flour spooned and leveled (375 grams) – 1 cup granulated sugar (200 grams) – 1 tablespoon baking powder – ½ teaspoon sea salt or table salt – ½ cup vegetable oil or other neutral oil (120 ml) – 3 large eggs at room temperature – 1 ½ teaspoons pure vanilla extract – 1 tablespoon almond extract – 1 cup slivered almonds (120 grams)

Preheat the oven to 350°F (180°C) and line two large baking sheets with parchment. Mix flour, sugar, baking powder, and salt in a large bowl.

In a separate bowl, mix oil, eggs, vanilla, and almond extract. Add wet ingredients to dry and whisk just until incorporated. If easier, make dough with your hands.

Stir in slivered almonds. Form three 3- or 4-inch-wide, 8-inch-long dough logs; place two on one cookie sheet and one on the other.

Bake until tops are set and edges are gently browned, 23–26 minutes. After baking, carefully slice each log into 1-inch diagonal slices.

Slices should be cut side up and 1 inch apart on baking pans. Bake another 10 minutes. Flip biscotti slices and bake for 8–10 minutes until golden brown. Cool fully before serving.
