Apple Cinnamon Baked Oatmeal Cups Recipe 

Healthier apple cinnamon baked oatmeal cups require only a few ingredients and a bowl. They're chewy on top, soft inside, and tasty. Plan ahead and enjoy the week!

– 1 and 1/2 cups (360ml) milk (dairy or nondairy) – 2 large eggs* – 1/2 cup (120ml) pure maple syrup* – 1/2 cup (120g) unsweetened applesauce – 3 cups (255g) old-fashioned whole rolled oats* – 1 teaspoon baking powder – 1 and 1/2 teaspoons ground cinnamon – 1/4 teaspoon ground nutmeg – 1/2 teaspoon pure vanilla extract – 1/4 teaspoon salt – 1 heaping cup (120g) peeled chopped apple*

Bake at 350°F (177°C). Prepare a muffin tin with nonstick spray. Spray nonstick muffin liners. So forgo the liners—the oatmeal cups stick to them anyway.

Beat everything except apples, nuts, and coarse sugar in a large bowl. Mix apples and nuts with a spoon or spatula. Wet batter.

Bake for 28 to 30 minutes, or until the top looks firm and the edges are gently browned. Cover the muffin pan with a piece of aluminum foil if the tops are browning too quickly.

Before serving, let cool for five to ten minutes. Store any leftover oatmeal cups in the refrigerator for up to a week, carefully covered.
