Baked Carrot Cake Donuts Recipe 

Carrot cake donuts that are made in an easy manner and topped with a cream cheese icing! The ideal treat for those who enjoy carrot cake or Easter!

CARROT CAKE DONUTS – 1 cup Bob's Red Mill Organic Unbleached All Purpose White Flour (spooned & leveled) – 1 teaspoon baking powder – 1 teaspoon ground cinnamon – 1/4 teaspoon ground ginger – 1/4 teaspoon ground nutmeg – 1/4 teaspoon salt – 1/3 cup buttermilk – 1/4 cup vegetable or canola oil – 1/2 cup brown sugar – 1 large egg – 1 teaspoon vanilla extract – 1/2 cup finely grated carrot CREAM CHEESE FROSTING – 3 ounces cream cheese softened – 2 tablespoons butter softened – 1/2 cup powdered sugar – 1/2 teaspoon vanilla extract

Turn the oven on to 350°F. Give a donut pan a thorough coat of nonstick frying spray and place it aside.

Mix Bob's Red Mill Organic Unbleached All Purpose White Flour, baking powder, cinnamon, ginger, nutmeg, and salt in a large basin. Set aside.

Beat the buttermilk, oil, brown sugar, egg, and vanilla thoroughly in a different mixing bowl.

Mix dry ingredients with wet ingredients until just mixed. Gently fold grated carrots into batter.

Only fill the donut pan cavities 2/3–3/4 full with batter. If you use a 6-count donut pan, bake in batches to obtain 8 donuts.

Bake donuts at 350°F for 10 minutes or until wooden toothpick comes out clean. Bake and let cool in pan for 5 minutes. Transfer donuts to wire rack to cool.

Mix cream cheese and butter in a bowl with an electric mixer until smooth. Mix powdered sugar and vanilla until mixed. Frost cooled donuts as desired.
