Banana Baked Oatmeal Cups Recipe

There are oats and bananas in these Banana Baked Oatmeal Cups, and they taste so good! Great for a quick and healthy breakfast during the week.

INGREDIENTS 

SERVINGS: 12 OATMEAL CUPS – 2 and 1/4 cups (225 grams) old-fashioned rolled oat – 1 teaspoon baking powder – 1/2 teaspoon ground cinnamon – 1/4 teaspoon salt – 1 cup (230 grams) mashed banana – 3/4 cup (180 ml) milk – 1/4 cup (85 grams) honey – 1 large egg – 1 teaspoon pure vanilla extract

INSTRUCTIONS

Warm the oven up to 177°F (350°C). Spray cooking spray that doesn't stick into each well of a 12-count muffin pan and set them aside.

Put the old-fashioned rolled oats, baking powder, ground cinnamon, and salt in a large bowl and mix them together. Put away.

Whisk the mashed banana, milk, honey, egg, and vanilla extract in a large bowl until combined. Mix dry ingredients with wet ingredients until well combined.

Divide the mixture evenly between the 12 muffin cups. Oatmeal cups should be set and firm after 20–25 minutes at 350°F (177°C).

Cool muffins in muffin pan for 10 minutes after baking. Then, carefully remove the oatmeal cups from the pan and cool on a wire rack.
