Banana Cookies Recipe

These cookies taste like your favorite banana bread, but they're made of bananas. If you'd rather, you can leave out the nuts or add chocolate chips instead. 

– 2 ½ cups (315 grams) all-purpose flour (spooned & leveled) – 1 teaspoon baking soda – 1 teaspoon ground cinnamon – ¼ teaspoon salt – ¾ cup (170 grams) unsalted butter (softened) – ¾ cup (150 grams) granulated sugar – ½ cup (100 grams) packed light or dark brown sugar – ½ cup (125 grams) mashed banana – 1 large egg yolk (room temperature) – 1 teaspoon pure vanilla extract – ¾ cup (90 grams) chopped walnut

Heat oven to 350°F (180°C). Reserve three large parchment or silicone-matted baking sheets. Mix flour, baking soda, cinnamon, and salt in a large bowl.

Beat the butter, granulated sugar, and brown sugar for 1–2 minutes in a stand mixer with the paddle attachment or a large basin with a handheld mixer.

Scrape the basin and mix the mashed banana, egg yolk, and vanilla essence. Stir in the dry ingredients until just blended, then slowly add the chopped walnuts.

Plop 1.5 tablespoons of cookie dough onto prepared baking trays, leaving space between each ball. After 10–12 minutes, cookies should have gently browned edges and firm tops.

 Cool the cookies on the baking pans for 5–10 minutes before transferring them to a wire rack. Cookies in an airtight container at room temperature last five days.
