Key Lime Poke Cake Recipe

Key lime poke cake mixes key lime pie's delicious tastes with a sweet vanilla cake for an easy, crowd-pleasing dessert.

INGREDIENT

For the cake -1 package vanilla cake mix 15.25 ounces -1 package instant vanilla pudding mix 3.4 ounces -¾ cup sour cream -¾ cup vegetable oil -3 large eggs lightly beaten -2 teaspoons pure vanilla extract -½ cup warm water -zest of 2 limes For the filling -1 can sweetened condensed milk 14 ounces -⅔ cup key lime juice I used Nellie & Joe’s bottled key lime juice -⅔ cup heavy whipping cream For the topping -8 ounces frozen whipped topping thawed -graham cracker crumbs and lime slices for garnish optional

INSTRUCTION

Preheat the oven to 350°F and line a 9x13-inch pan with parchment or non-stick spray.

Step 1

A stand mixer with the paddle attachment or a hand mixer in a large basin should beat the cake mix, pudding mix, sour cream, oil, eggs, vanilla, water, and lime zest for 2 minutes on medium speed. Scrape bowl bottom as needed.

Step 2

Offset spatula or spoon batter in pan.Bake till golden brown and cake top springs back, 35–40 minutes.Let cake cool 10 minutes. Halfway through, poke holes every inch in the cake with a smoothie straw or wooden spoon handle.

Step 3

In a medium bowl, combine sweetened condensed milk, lime juice, and heavy cream. Fill cake holes immediately with mixture. Cool cake completely.
