– 2 cups flour– ¼ cup sugar– 2 teaspoons baking powder– 1 ½ teaspoons ground ginger– 2 teaspoon orange zest– ½ teaspoon salt– ½ cup vegan margarine– 1 cup chopped cranberrie– ½ teaspoon vanilla– 6 tablespoons almond milk– 1 tablespoon turbinado sugar

Start with a 400-degree oven. Arrange parchment paper or a Silpat mat on a baking sheet. Mix flour, sugar, baking powder, ginger, orange zest, and salt in a large bowl. Use a pastry cutter or fork to cut margarine into flour.

After the mixture has reached a coarse consistency, incorporate the cranberries and combine them thoroughly.

Mix vanilla and 5 tablespoons almond milk in a small bowl before adding to flour mixture. Mix well, adding the remaining milk a few tablespoons at a time, until dough forms and no dry ingredients remain.

On prepared baking sheet, form dough into rough circle. Cut 6 equal triangles with a sharp knife and space evenly across sheet. Brush scones with a tablespoon of almond milk and sprinkle with turbinado sugar.
