Colorful Carrot And Goat Cheese Frittata Recipe

1 bunch colorful carrots, peeled 2 tablespoons olive oil 2 tablespoons maple syrup 2 teaspoons lemon juice ½ teaspoon salt Black pepper, to taste 8 eggs 5 ounces goat cheese



Preheat the oven to 400 degrees Fahrenheit. Using parchment paper, line a baking dish with the dish.

Toss carrots with olive oil, maple syrup, and lemon juice in baking dish. Sprinkle salt and black pepper on carrots.

Roast for 20 minutes in the oven. Meanwhile, whisk eggs in a large bowl. Grease a casserole with butter or spray.
