This cranberry banana bread is a wintery take on an old favorite. It has both sweet and tart cranberries.
Ingredient
-2 cups fresh or frozen cranberries
-2 cups granulated sugar divided use
-2 cups flour
-1 teaspoon baking powder
-¾ teaspoon baking soda
-1 teaspoon fine sea salt
-3 eggs
-2 teaspoons pure vanilla extract
-4 bananas mashed (about 2 cups)
-14 tablespoons unsalted butter melted and cooled
Instruction
Preheat the oven to 350°F. Butter and parchment a 10x5-inch loaf pan. Set aside.Cut cranberries coarsely. Mix 1 cup sugar with them and set aside.

In a large bowl, combine the remaining granulated sugar, flour, baking powder, baking soda, and salt.Mix eggs, vanilla, and mashed bananas in another bowl. Stir dry ingredients just until combined.

Mix in sugared cranberries and melted butter. Fill loaf pan with batter. Put coarse sugar on top.

Bake for 1 hour 10 minutes or until a toothpick inserted into the center comes out clean. After 15 minutes in the pan, cool on a wire rack.
