Crispy French Onion Chicken Tenders Recipe

Where is the tender chicken? This term refers to thinly cut chicken breasts, hence it's not on any galline anatomy chart. According to recipe creator Deniz Vergara, thinly slicing and/or pounding chicken tenders is key to cooking them well. 

Ingredient

– ½ cup all-purpose flour – 2 eggs, beaten – 1 ½ cup crispy fried onions, crushed – ½ cup panko breadcrumbs1 teaspoon salt, divided – ½ teaspoon onion powder – 4 boneless skinless chicken breasts, sliced in half lengthwise (or 1 ¼ pound chicken tenders) – ½ cup avocado or other high smoke point neutral oil

Direction

Set a breading station: Mix flour, eggs, fried onions, breadcrumbs, and ½ teaspoon salt in separate shallow dishes before to combining.

The onion powder and the remaining salt should be applied to all sides of the chicken before cooking.

Dredge each chicken tender in flour, tapping off excess. After coating the floured tenders in eggs, dip them in the crumb mixture and press it into the chicken on both sides.

Preheat oil to 350 F.Fried chicken tenders for a few minutes on each side until golden. For grease absorption, drain on paper towels.
