Easy Mini Plum Brie Tarts have puff pastry, melted brie, and sweet plum slices. Honey and fresh thyme make these tarts perfect for brunch or breakfast.Make simple plum and brie puff pastry tarts! The plums may be hardest to slice.
Ingredient
– 1 sheet puff pastry– Peach (or apricot) preserves – 4 ounces brie cheese– 3 small to medium plumEgg wash– 1 large egg– 1 Tablespoon water– 2 Tablespoons turbinadoHoney mixture:– ⅓ cup honey– 1 Tablespoon fresh thyme leave– 1 teaspoon freshly squeezed lemon juice

Preheat oven to 425°F. Parchment a large rimmed baking sheet.Set puff pastry sheet on lightly floured surface. Roll the pastry to 12x12 inches carefully with a rolling pin. Cut 9 4-inch squares. Position pastry squares on parchment-lined baking sheet.

Spread 1 tablespoon of preserves on each square without touching the pastry edges. Put 2-3 brie slices (depending on size) on top of the preserves.

Put two or three slices of plum (or pluot) on top of the brie.

Egg wash is made by beating egg and water in a small bowl. Brush pastry borders with egg wash. Sprinkle sugar evenly on the border.

Bake until the edges puff and are golden brown and crisp, 25–30 minutes. Melting brie may cover the pastry.

Mix the honey, lemon juice, and fresh thyme while the tarts bake. Rest tarts on baking sheet for a few minutes.

To serve, drizzle honey-thyme mixture.
