Gaji Mari (Korean-Style Eggplant Rolls) Recipe

If you like fresh vegetables, many traditional Korean dishes use a variety of them, adding balance and healthiness. A popular Korean side dish, Gaji Mari, is thinly sliced and seasoned eggplant rolled into cylindrical shapes around raw vegetables.

– 3 Chinese eggplant – 4 tablespoons olive oil, divided – ½ teaspoon salt – ¼ teaspoon black pepper – ½ red bell pepper, sliced thin – ½ yellow bell pepper, sliced thin – ½ green bell pepper, sliced thin – ¼ cup thinly sliced purple cabbage – ¼ cup broccoli sprout

Eliminate the eggplant's end and peel it into strips with a potato peeler, discarding the first piece.

Add as many eggplant strips as fit to your pan and salt and pepper. After 2 minutes per side, repeat with the remaining oil and eggplant

Layer equal amounts of sliced peppers, cabbage, and sprouts at the bottom of each strip on a cutting board.
