Maple Cinnamon Marshmallows Recipe

Homemade marshmallows are a fun and easy way to start making candy. Molten sugar is poured into gelatin and whipped into a fluffy, cloud-like confection that is fun to make and eat.

– ⅓ cup granulated sugar – ¼ cup maple sugar – 1 tablespoon cornstarch – 1 teaspoon plus a pinch cinnamon – 3 tablespoons gelatin – 1 cup cold water, divided – 1 cup maple syrup – Pinch salt

Blend granulated sugar, maple sugar, cornstarch, and 1 teaspoon cinnamon. Mix to powder.

Sprinkle ¼ cup of sugar/cornstarch mixture evenly on a rimmed baking sheet to cover the base. Set aside remaining mixture.

Mix gelatin with ½ cup of cold water in a small bowl. Let the gelatin sit for 5 minutes to soften and absorb into the water.

Stir constantly over medium heat until 235 F. While the maple syrup cooks, add the remaining pinch of cinnamon and salt to the gelatin.

With the stand mixer on low, slowly add the hot maple syrup mixture to the bloomed gelatin.

Pour the mixture into the pan now. Smooth the top with a spatula. It need not be square and won't reach the pan's edges.

Let the marshmallow set for 4 hours or until firm. Once set, remove marshmallow from pan and place on cutting board.

 Trim the edges and cut into 1 ½-inch squares with a sharp knife. Sprinkle the remaining sugar mixture on all sides of each square and serve.
