Mini Buffalo Chicken Tacos Recipe

INGREDIENTS

– 1 tsp garlic powder – 1 tsp paprika – ½ tsp salt – ½ tsp pepper – 1 lb. boneless, skinless chicken breast – 1 Tbsp olive oil, plus more for tortilla – ½ cup buffalo sauce (I like Frank's) – 12 street taco-size flour tortillas (or other small tortillas) – ⅓ cup crumbled blue cheese or ½ cup shredded cheddar (or cheese of your choice) – Blue cheese sauce, for topping (recipe below) – Shredded carrots, for topping – Diced avocado, for topping – Diced tomatoes, for topping Blue Cheese Sauce – ⅔ cup crumbled blue cheese – 2 Tbsp buttermilk – 1 Tbsp sour cream or Greek yogurt – ½ tsp minced garlic – ½ tsp lemon juice – ¼ tsp pepper

INSTRUCTIONS

Mix garlic powder, paprika, salt, and pepper in a small bowl.Apply spice mixture to both sides of chicken breasts.

Step 1

Stir olive oil into a large skillet over medium heat. Cook chicken breasts until just cooked, 4–5 minutes per side, turning once. Cut chicken on a board after cooling.

Step 2

After cooling, shred chicken with two forks or hands. Chicken-shredded buffalo sauce bowl. Cover chicken in sauce.Preheat oven to 425.

Step 3

Microwave tortillas for 45 seconds in a damp paper towel. Place tortillas on a baking sheet with olive oil on both sides.

Step 4

Shredded buffalo chicken on half the tortillas. Add crumbled blue or cheddar. Fold and press tortilla to close taco.

Step 5

Bake sheets for 6 minutes. Put tacos back in oven for 5-6 minutes to crisp up.
