Pan-Fried Lima Beans With Feta And Lemon Zest Recipe

Quick and easy, pan-fried lima beans have bright, zesty flavors and are ready in under 30 minutes. Krisenia Prints' recipe from At the Immigrant's Table utilizes frozen lima beans' creamy texture by pan-frying them in lemon-garlic olive oil.

1 lemon 2 tablespoons olive oil 2 + 1 stems of thyme, divided 1 garlic clove, peeled 1 pound frozen lima beans, cooked 4 ounces feta cheese, cubed salt and pepper, to taste

Peel the lemon in a 1-inch strip. Set aside the remaining lemon zest and juice. Warm olive oil in a pan.

Add two thyme stems, garlic clove, and lemon peel to the pan. Let them simmer and infuse for 3–5 minutes.

Thyme, lemon peel, and garlic should be removed from oil. Cook the cooked lima beans in flavored oil for 10–12 minutes until tender.

To make up for the loss of the salty flavor of the feta, you might also want to season the finished dish with a little extra salt.

After turning off the heat, add feta, lemon zest, and 2 tablespoons lemon juice.

Add salt and pepper to taste. Put everything in a bowl. Top with one thyme sprig's leaves.
