Peanut Butter Cup Protein Pudding Recipe

Pudding is underrated. The last time most of us had pudding was in a plastic cup at the bottom of our middle school lunchboxes. We looked forward to pudding cups every day until high school, when they disappeared.

– ½ cup granulated sugar – 2 tablespoons cornstarch – 2 tablespoons cocoa powder – ¼ teaspoon salt – 1 ½ cups heavy cream – ½ cup milk – 3 egg yolk – 4 ounces 70% cocoa bittersweet chocolate, chopped – 2 tablespoons peanut butter – ¼ cup sifted protein powder – 1 teaspoon vanilla extract

Mix sugar, cornstarch, cocoa powder, and salt in a small bowl. Mix heavy cream, milk, and egg yolks in a heavy saucepan.

Add dry ingredients to saucepan and whisk until smooth. Boil the mixture over medium heat, stirring constantly with a spatula.

When the mixture boils, remove from heat. Thick mixture. Remove egg and lumps from pudding by straining.

Mix in chocolate, peanut butter, protein powder, and vanilla immediately. Blend thoroughly. Cover and chill 2 hours.

Cooling thickens pudding. If desired, serve in individual dishes with chopped peanut butter cups and whipped cream.
