Sabich (Middle Eastern Stuffed Sandwiches) Recipe

Falafel and shawarma are popular worldwide, but sabich, an Iraqi pita sandwich, is mostly eaten in Israel. A sabich is a pita sandwich with fried eggplant, hard-boiled egg, Middle Eastern salad, Israeli pickled vegetables, hummus, tahini sauce, and amba sauce. 

– 2 plum or vine-ripened tomatoes, diced – ½ small cucumber, peeled and diced – ½ red onion, finely diced – ¼ cup finely chopped fresh parsley – Juice from ½ lemon – Salt, to taste – ¼ cup tahini paste – 2 tablespoons lemon juice – 2 garlic cloves, peeled and pressed – ⅛ teaspoon salt – 2 tablespoons water – 1 large eggplant – Neutral oil, for pan-frying the eggplant – 4 hard boiled egg – 4 pita – ½ cup hummu – Pickled vegetables, to taste – Amba sauce, to taste

Mix all the ingredients in a medium bowl to make the Middle Eastern salad. Set aside.

Whisk the tahini paste, lemon juice, garlic, and salt in a small bowl to make the sauce.

Add water slowly to make a creamy sauce. Add or subtract water to achieve the desired consistency.

Add more lemon juice or salt to taste, then set aside. After washing and cutting eggplant into ⅜ inch thick rounds, cut them in half.

Cook oil in a pan over medium heat. Slide eggplant slices into the pan and fry for 4-5 minutes per side until soft and golden.

This requires two batches. If all absorbs, add more oil. Drain and salt the fried eggplant slices on a paper towel-lined plate.

Peel and slice hard-boiled eggs. Spread 2 tablespoons hummus inside each pita after slicing the tops.

Layer eggplant slices, hard-boiled egg slices, pickled vegetables, and Middle Eastern salad on hummus.

Place a drizzle of tahini sauce and amba sauce on each of the sandwiches. Serve as soon as possible.
