Sausage, Grape, and Gorgonzola Flatbread Pizza Recipe

INGREDIENTS

– 2 Tbsp olive oil, divided– ½ lb. spicy or sweet Italian sausage (if sausage is in casing, remove)– 1 small onion, peeled and thinly sliced– ¼ tsp salt– ½ batch flatbread dough (recipe below)– ½ cup grapes, halved– ¾ cup crumbled gorgonzola cheese– ½ tsp red hot pepper flakes, optionalFlatbread Dough– ¾ Tbsp active dry yeast– 1 ½ cups lukewarm water– ¾ Tbsp salt– 1 ½ tsp granulated sugar– 2 Tbsp extra-virgin olive oil– 3 ¼ cups all-purpose flour
INSTRUCTIONS
Preheat oven to 450°F. Place 9x13 pans in preheated oven. Heat 1 Tbsp olive oil in a large skillet on medium.

Step 1
Brown sausage for 5-7 minutes, breaking up with a spoon or spatula. Reserve sausage in bowl and leave grease in pan.

Pan-cook sliced onion and salt for 7 minutes until soft and brown. Stop cooking.

Cut dough twice. Refrigerate one portion in plastic wrap for 7-10 days. Roll the remaining dough into a 9x13-inch rectangle on lightly floured surface.

Sprinkle flour and/or cornmeal on the pan to prevent sticking after preheating the oven, then carefully place the dough rectangle on top.

Brush dough rectangle with 1 Tbsp olive oil. Next, evenly distribute onions, sausage, grapes, and gorgonzola on dough.Bake crust 9-12 minutes until golden. Add red pepper flakes before serving.

Wait 2 minutes after mixing yeast and water in a large bowl.Stir in salt, sugar, and extra-virgin olive oil.
