Soft Molasses Cookies Recipe

You can make no-bake mini cheesecakes ahead of time for dinner parties and other events. Cheesecakes made in muffin pans make perfect servings.

– 2 and 1/4 cups (285 grams) all-purpose flour (spooned & leveled) – 1 teaspoon baking soda – 2 teaspoons ground ginger – 1 teaspoon ground cinnamon – 1/2 teaspoon ground clove – 1/4 teaspoon salt – 3/4 cup (170 grams) unsalted butter softened – 1 cup (200 grams) light or dark brown sugar lightly packed – 1 large egg room temperature – 1/4 cup (60 ml) unsulphured molasse – 1 teaspoon pure vanilla extract – 1/4 cup (50 grams) granulated sugar optional

Direction

Stir flour, baking soda, ginger, cinnamon, cloves, and salt in a medium bowl. Beating butter and brown sugar in a stand mixer with the paddle attachment or a big basin with a handheld mixer takes 1–2 minutes.

Step 1

Mix egg, molasses, and vanilla then scrub basin sides. Mix dry ingredients. 1 hour refrigerated, firmly wrapped. Set oven to 350°F (177°C) when dough is almost cool.

Step 2

Roll parchment or silicone for large baking sheets. Add refrigerated cookie dough balls to baking pans with a tablespoon scoop. Baked sugared balls again.

Step 3

Bake firm, cracking cookies for 8–11 minutes. Lift the cookies carefully to a wire rack to finish cooling after 5–10 minutes on the baking sheets.
