Sweet And Savory Turkey Meatloaf Muffins Recipe

Turkey meatloaf muffins evoke Thanksgiving year-round. They cook fast but have hearty flavors. It's easier to make than roasting a turkey, and the ingredients are available year-round.

– 4 tablespoons butter – ½ cup chopped onion – 1 tablespoon chopped garlic – ½ cup chopped celery – ½ cup peeled and chopped carrot – ⅛ teaspoon dried thyme – ⅛ teaspoon dried oregano – ¼ teaspoon dried sage – 2 cups chicken broth – 2 egg – 4 cups stuffing mix – 1 pound ground turkey – 2 tablespoons chopped parsley – 1 cup cranberry sauce

In a large skillet, add the butter and melt it over high heat. Add the carrots, celery, onion, and garlic that have been chopped.

 In a measuring cup, add the eggs, chicken broth, and dried seasonings; whisk to mix.

Combine the stuffing mix, chicken broth mixture, and softened vegetables in a large bowl.

Add the chopped parsley and ground turkey to the bowl and stir to mix. Set the oven's temperature to 375 F.

Muffin tin wells should be greased with butter or cooking spray. The turkey mixture should be distributed evenly among the 12 muffin wells.

Spoon half of the cranberry sauce over each muffin top. Bake for 25 minutes, or until the internal temperature reaches 165 F, in a preheated oven.
