Zucchini Feta Skewers Recipe

A cheerful, fast, and simple gluten-free appetizer are zucchini feta skewers. Rolling fresh zucchini ribbons with creamy, zesty, flavorful marinated feta. Skewered and grilled till tender. Serve these little treats at your next dinner gathering!

Ingredient

– 1 medium zucchini, trimmed and peeled – 6 ounces marinated feta cheese

Direction

To make thin, long strips out of the zucchini, use a veggie peeler or a mandoline cutter.

Lay one zucchini ribbon flat on your cutting board. Place a marinated feta cube on the short end nearest you. Encase the marinated feta by rolling the zucchini ribbon away from you.

Repeat until all zucchini is used.Gently place 3 zucchini-wrapped feta cubes on a small bamboo skewer. (Using two skewers prevents rolling when cooking.)

Lightly coat a grill pan or griddle made of cast iron with a little amount of olive oil. Bring the temperature up to medium-high.

Put the zucchini skewers on the hot surface and cook for a few minutes on each side until they start to brown. Keep rolls on skewers and serve warm.
